Quarterly Freezer Meals

Nov 22nd at 10am in the cultural hall we will have our quarterly Freezer Meal Activity

Twice Baked Potatoes $4.60

3 large baking potatoes (this makes 6 portions), 1/2 cup chicken broth, 1 cup sharp cheddar cheese, 1/2 cup sour cream, 1/3 cup chopped green onions, 1/4 tsp paprika, 1 tsp dijon mustard

reheat in oven 350 for 30 minutes, or in the microwave

Teriyaki Chicken, Thighs- $4.30 Breasts- $6.10

4 Chicken thighs or breasts, 1/2 cup soy sauce, 1/2 cup brown sugar, 1/2 Tbl sesame oil, 1/2 tsp ground ginger, 1/3 cup water

Bake in 350 oven. 45 minutes covered, 45 minutes uncovered.

Potato, Corn, Bacon chowder $7.65

Ingredient list: 1 can corn- undrained, 24 oz frozen hash browns, 2 can evaporated milk, 1 1 1/2 cups chicken broth, 1 chopped onion, 2 stalks celery chopped, 8 slices of cooked bacon- chopped, 1/2 tsp salt, 1/2 tsp Worcestershire sauce, 1/4 tsp pepper

Crock pot: low for 5-6 hours or on high for 3-4 hours

Make a roux with 1/2 cup butter and 1/2 cup flour, mix into soup. ( mix small amounts of liquid from the hot soup into the roux, stirring constantly, and then after about 3 cups of liquid have been added and stirred, I pour it all back into the soup. It helps to incorporate better and not make chunks into the soup.

 

Pasta Fagioli $5.70

Can choose to use ground beef, turkey or sausage in this soup. Ingredient list: 1/2 lb  meat, 1 chopped onion, 1 1/2 peeled and chopped carrots, 1 1/2 diced celery stalks, 1 can diced tomatoes, 1/2 can kidney beans- drained, 1/2 can great northern beans- drained, 2 cups beef broth, 1 cup marinara sauce, 1 tsp italian seasoning, 1/4 tsp salt, 1/4 tsp pepper.

Add 1 1/2 cup elbow macaroni in the last 1/2 hour of cooking.

crockpot: on low for 5 -6 hours or on high 3-4 hours.

Artichoke Chicken Couscous $9.00

1 can chicken, Do Not drain, use the juice, 1 can artichoke hearts- drain and chop, 2 cans Italian diced tomatoes, 1 lb couscous, Spice bag (3 Tbl dried onion, 1 tsp garlic powder, ½ tsp Italian seasoning, ½ tsp thyme, ½ tsp salt, ¼ tsp pepper, 2 Tbl parsley flakes)

Place couscous in med bowl, add 2 ½ cups boiling water, cover and let sit 10 minutes, fluff. Place rest of ingredients in medium pan and simmer for 20 minutes.

Serve over couscous.

Sweet Potato Curry $7.00

Can serve this over rice or eat as a soup. Ingredient list: 1 chopped Onion, 1 tsp minced Garlic, 1 1/2 Tbl curry powder, 1/2 tsp ground ginger, 1/2 tsp cayenne pepper, 2 sweet potatoes- peeled and chopped, 1 cup peas, 1 can coconut milk, 2 cans chicken broth.

put everything but the coconut milk in crock pot: cook on high for 3-4 hours or on low for 5 -6 hours. put coconut milk in just before serving….
