Our class will be held Oct 23rd, wed morning at 10am at the church. Come and learn how to make your jack-o-lanterns into pumpkin pie!

Making Pumpkin- our family tradition

I have always used my jack-o-lanterns pumpkins, but butternut squash is also good to use. To cook the pumpkins: cut in half, cut off stem, remove all seeds, cut into large chunks. Place in stew pot with 2 inches of water.  Layering the chunk s of pumpkin. Cook on medium heat until the flesh is completely soft. (About 20 – 30 minutes- depending on thickness of your pumpkin) Take pieces out of the pan and let cool slightly. Scrape the flesh off the skin and place into food processor or blender. Blend till very smoothe, this may take one or two Tbl of cooking water to make it churn. I freeze my pumpkin in quart size bags, 3 1/2 cups makes 2 pies. Use this for any of your pumpkin recipes.

Pumpkin Pie- my mother’s recipe

This recipe makes 2 pies: 4 eggs slightly beaten, 1 1/2 cups sugar, 2 tsp cinnamon, 1/2 tsp ground cloves, 1 tsp ground ginger, 1 tsp salt, 3 1/2 cups pumpkin, 2 cans evaporated milk.

Mix together in the order given, place in uncooked pie crust. Bake in hot oven 425 for 15 minutes. then cool oven to 375 for 50 – 60 minutes or until toothpick comes clean.

Easy Pumpkin Desert- Canah

Prepare one large can of pumpkin pie filling according to instructions on the can.
Pour the filling into a 9×13 baking dish.
Sprinkle the contents of one spice cake mix evenly over the top.
Top with chopped walnuts or pecans (about 1-2 cups)
Drizzle 1/2 cup melted butter evenly over the cake mix & nut topping
Bake in the oven just like a pie– 15 min at 450 degrees then 40-45 min at 350 degrees. Test with a knife inserted in the center. You may want to put a piece of foil (shiny side up) for the last 15-20 min to prevent the nuts from charring. Cool for about 10-15 min then serve with whipped cream or ice cream.

No Sugar Whipped Cream
Whip a pint of heavy whipping cream to thick consistency
Add maple syrup 1-2 tablespoons at a time as you continue whipping until its as sweet as you like. (6-10 Tbs usually does the trick).

Pumpkin Bars- my Aunt’s recipe

Mix together: 4 eggs, 1 2/3 cups sugar, 1 cup oil ( I use 1/2 cup oil, 1/2 cup applesauce), 16 oz pumpkin. Then add: 2 cups flour, 2 tsp cinnamon, 1 tsp salt, 2 tsp baking powder, 1 tsp baking soda.

Pour into greased and floured jelly roll pan, or cookie sheet… smooth to the edges. Bake 350 for 30 minutes. Frost with cream cheese frosting: 8 oz cream cheese, 1 cube margarine, 2 tsp vanilla or you can flavor with lemon or orange if desired, 2 1/2 cups powdered sugar. beat till creamy and frost the bars.

Canned Apple Pie Filling- My Grandmother’s recipe

Pack 7-8 jars with 6 lbs of tart apples. Peel, core and slice the apples. Fill each jar with hot syrup leaving 1 inch of head space. Process in water bath or steam canner for 20 minutes. Bake in a pie shell at 375 for 50 minutes. (Crumb topping: 1/4 cup butter, 1/2 cup flour, 1/2 cup sugar.. cut the butter into the mixture until pea sized chunks appear. pour over the apples in the uncooked shell. )

Syrup: 4 1/2 cups sugar, 2 tsp cinnamon, 1 tsp salt, 1 cup cornstarch, 1/2 tsp nutmeg, stir in 10 cups of water. Blend together in a large sauce pan and cook till thick and bubbly. Keep stirring, add 3 Tbl lemon juice (I use concentrate).

Apple Muffins– I found this recipe years ago from a bed and breakfast on the east coast. It is one way that I get rid of older apples to make something yummy!

Mix together, 3 1/2 cups flour, 3 cups finely chopped apples ( i leave the skins on), 1 1/2 cups sugar (it calls for 2 cups but i never use that much), 1 tsp salt, 1 tsp baking soda, 1 tsp cinnamon, 1 1/2 cups oil ( i use 1 cup applesauce and 1/2 cup oil), 1 tsp vanilla, 1/2 cup toasted nuts- optional.

makes 24 muffins, grease your pans well. Bake for 30 minutes at 350.

Cream Cheese Carmel Dip- I like this heated a bit in the microwave

8 oz cream cheese at room temp. 3/4 cup brown sugar, 1/4 cups white sugar, 1 tsp vanilla. combine all ingredients in a bowl and blend with hand mixer until creamy.

Apple Crisp

8 cups sliced and peeled apples, 1 1/2 cup brown sugar, 1 cup oats, 1 cup flour, 1 1/2 tsp nutmeg, 1 1/2 tsp cinnamon, 1 cube butter.

Heat overn to 375. Grease 9 X 13 pan. Place apples in pan. Mix the rest of ingredients and place on top. Cover and bake 30 minutes, uncover and bake 10 minutes more.
