Welcome back to the cooking class, come enjoy some great breakfast ideas. 10am at the church.

Overnight Oatmeal– 1 container Greek yogurt 1/4 cup old fashioned oats 1/4 cup fruit Refrigerate overnight in mason jar or other sealed container.

Flavored oatmeal packets– Using snack baggies, put in one serving of oats in the bag and add toppings. Dried fruits: apples, pears, bananas, raisins, dates, cherries, apricots, strawberries, pineapple, etc. Add some chopped nuts: peanuts, pecans, walnuts, macadamia nuts, almonds, etc. Add a spice: cinnamon, nutmeg, cloves, powdered ginger, pumpkin pie spice, etc. Add some brown sugar. Label the bag and remember to add 2 parts water for your 1 part oats when cooking this up.

Breakfast Burritos– Saute some veggies: chopped onion, bell pepper, mushrooms, & frozen potato hashbrowns. Add eggs and meat of your choice (sausage, bacon, ham). When cooked through add shredded cheese. season with salt and pepper. Using warmed flour tortillas, make a burrito. Wrap in a paper towel, then in foil. Place them in a zip lock freezer bag. Reheat in the microwave, take off foil, leave on the paper towel, cook for 1 minute. Serve with salsa.

Breakfast parfaits– layer in a glass: 1/4 cup whole grain cereal or granola, 1/4 cup yogurt, 1/4 cup fruit. repeat layers and serve.

Smoothie in a bag– place all your ingredients for your favorite morning smoothies in zip bags and freeze. Place in a blender with ice or juice and enjoy. Ideas for ingredients: strawberries, coconut, bananas, papaya, fresh pineapple, kale, spinach, blueberries, peanut butter, apples, oranges watermelon, yogurt, juice concentrate, raspberries, mangoes, etc…

Hard boiled eggs in the oven– Place them in a muffin pan so they won’t roll around. Bake them in the oven at 325-350 degrees for 30 minutes. Depends on your own oven.

Breakfast sandwiches– Bagels with Nut butter (almond, peanut, cashew) & banana slices. Using different breads, bagels, croissant, or english muffins: eggs, avocado, tomato, onions, sprouts, various cheese, ham, sausage, bacon, etc. These can even be frozen and then reheated in Microwave.

Cereal Bars– You can make your own cereal bars that are healthier and lower in costs than those you buy. Here are a few ideas:

Now for a little Fancier Breakfast for those special occasions.

Breakfast casserole– This can be made a day ahead and then just baked in the morning.

French Toast and fruit skewers– Create french toast kabobs with 2 inch square french bread pieces , strawberries and bananas. Cut up a loaf of french bread and cook your toast pieces just like french toast, then skewer with whole strawberries and sliced bananas. Great to dip in sauces or syrup.

Crepes– So easy to make and so many choices for fillings. Put all ingredients in a blender and blend. 1 1/2 cups flour, 3 eggs, 1 1/2 cups milk, dash salt, 2 Tbls oil. Spray your pan each time and i do cook both sides of the crepe. Filling options: nutella, sliced fruits & berries, pie fillings, whip cream, powdered sugar, cream cheese, flavored pudding, syrup, ricotta, cottage cheese, chopped nuts, bacon, mushrooms, ham and eggs, marmalade, jams & jellies, etc.

German pancakes– The best part about making this is watching it grow in the oven like a monster in the pan. AND it is so easy to make! Preheat oven to 400F.  Place 6 Tbl sliced butter in 9×13″ baking pan and let it melt in the oven.  Meanwhile, mix 1 cup flour, 1 cup milk, 6 eggs, and 1/2 tsp salt with mixer.  Remove pan with melted butter from the oven and pour batter into the pan.  Return the pan to the oven for 15-20 minutes.  The sides will rise considerably so make sure it is in the middle or lower section of the oven. You can serve this with so many different things….

Cinnamon Roll Wreath– I make my recipe of cinnamon rolls. make the roll but only cut 3/4 of the way into the rolled up dough. then place it on a foil covered pan and lay it in a circle. Pull each roll out and lay it out to form a wreath. Cook and then frost. Very pretty with pecans and candied fruits on top.

Fruit Galettes– These are a french cuisine. They are typically a flat, round, freeform pastry. Like a pie without a pan. There are various types in both sweet and savory recipes. Here are a few to try:

Cream cheese danish– oh so easy and by far my favorite pastry!!! You will need 2 cans of refrigerated crescent dough rolls, 8oz cream cheese, 3/4 cup sugar, 2 tsp vanilla. Lay one package of crescent rolls out in the bottom of a 9×13 pan. mix cream cheese, sugar and vanilla together and spread over the pastry. lay the other package of rolls over the top. Cook at 350 for 20-22 minutes. drizzle with glaze made of milk, powdered sugar and almond extract. You can sprinkle with sliced almonds if desired. YUM!

Breakfast casserole in the crock pot! Cooks while you sleep!– Spray crock pot with cooking spray and evenly spread 26oz bag of frozen hash browns at the bottom. Crack 12 eggs in a large bowl and mix well (and slowly) using a whisk. Add 1 cup milk. Sprinkle in the  1 Tbl ground mustard. This might sound like a weird ingredient, but I’ve come to love (and use) this in most of my recipes. Add plenty of salt….and lots of fresh pepper. Mix well and set aside. Cook 1 lb of sausage on high heat, drain. Add sausage on top of hash browns. Sprinkle with 16 oz shredded cheddar cheese. Mix it up well. Pour the egg mixture over everything in the crock pot. Using a wood spoon, even everything out so it’s spread evenly. Turn the crock pot on low for 6-8 hours.

Stuffed French Toast– Mix 3 Tbl Jam and 4 oz cream cheese together until smooth. Slice i day old loaf of french bread into 1 1/2 inch slices. Cut a pocket in each piece and fill with the cream cheese. Beat together 6 eggs, 1/4 cup cream or milk, 2 tsp vanilla, cinnamon, 1 Tbl sugar, and 1/4 cup pancake mix. Dip bread into the egg mixture and fry until golden brown. Dust with powdered sugar and serve with syrup.

Apple Pancakes– Spray 9X13 pan with cooking spray. In large bowl combine 1 beaten egg, 3/4 cup milk, 3/4 cup chunky applesauce, 1 tsp vanilla and 2 cups of pancake mix. spread one can of apple pie filling in the prepared pan, pour mixture over the top of the apples. In a medium bowl combine 1/2 cup quick oats, 1/4 cup brown sugar, 1/2 cup pancake mix, 1/4 tsp cinnamon and 3 Tbl butter. Sprinkle the topping over the pancake batter. Bake at 375 for 20-25 min. Serve with Cinnamon syrup and cool whip.

Cinnamon Syrup– In a saucepan combine 1 cup sugar, 2 Tbl cornstarch, 2 tsp cinnamon, 2 cups Apple Cider or Apple juice and 2 Tbl lemon juice. Bring to a boil, remove from the heat and add 1/4 cup butter.

Buttermilk Syrup– In a large saucepan, stir together 1 1/2 cups white sugar, 3/4 cups buttermilk, 1/2 cup butter, 2 Tbl corn syrup, and 1 tsp baking soda. Bring to a boil, and lower heat and cook stirring for 7 minutes. Remove from the heat, and stir in 1 tsp vanilla extract. When reheating don’t boil again.

Homemade Maple syrup– Ratio is this: 1 part water to 2 parts white sugar. Do not boil, but in a pan on the stove, melt the sugar. Take off the burner and add: 3 parts light corn syrup, vanilla extract, maple extract. ( I use 1 tsp of each if I used 1 cup of water in my ratio) This stores nicely in the fridge… my children will NOT eat store bought syrup. All my children have learned to make this SIMPLE and DELISH syrup!!!

Coconut syrup– In a large saucepan, stir together 1 1/2 cup sugar, 3/4 cup buttermilk, 1/2 cups butter, 2 Tbl corn syrup, and 1 tsp baking soda. Bring to a boil, and lower heat and cook stirring for 7 minutes. Remove from the heat, and stir in 1 tsp coconut extract and 1 Tbl cream of coconut ( NOT coconut milk) This will foam up a lot! When reheating don’t boil again.

Carmel Syrup-1 cup brown sugar, 1 cup whipping cream, 1 cup light corn syrup. Combine ingredients in a saucepan and cook over medium heat until the sugar is dissolved and the mixture is combined. It really doesn’t take very long at all!
