Parmesan Honey Pork Roast–  2 lb pork roast, 2/3 cup parmesan, 1/2 cup honey, 3 Tbl soy sauce, 2 Tbl italian seasoning, 2 Tbl garlic minced, 1/2 tsp salt. Crock pot on low 7-8 hours or high 4-5 hours

Swedish Meatballs– 1.5 lb meatballs, 1 can cream of mushroom soup, 1 can beef broth, 1 pkg dry onion soup/dip mix, 2 Tbl steak sauce. crock pot low for 4-5 hours, or on high 2-3 hours. at the end of cooking add 1 cup sour cream and serve over noodles

Pork Carnitas– 2.5 lb pork roast, 2 tsp salt, 2 tsp chili powder, 1 tsp cumin, 1 tsp italian seasoning, 5 garlic cloves minced, 1 onion diced, 1/2 cup orange juice, 1 Tbl lime juice. Crock pot on low 8-10 hours, shred

Honey Sesame Chicken– 2 lbs chicken thighs, 1 onion diced, 2 garlic minced, 1/2 cup honey, 1/2 cup soy sauce, 1/4 cup ketsup, 1 Tbl sesame oil, 1 Tbl vegetable oil, 1/4 tsp red pepper flakes. Crock pot on low 4 hours, shred garnish with green onions

Ranch Pork Chops– 2 lb Pork chops, 1 envelope ranch dressing mix, 2 cans cream of chicken soup. crock pot on low 4-6 hours

Here are more of the recipes I am using this summer with freezer meals.

Yummy Grilled Chicken
2 lb chicken breasts, 1/4 cup cider vinegar, 3 Tbl dijon mustard, 3 cloves garlic, juice from one lime, 1/2 of one lemon juiced, 1/4 cup brown sugar, 1 1/2 tsp salt, 1 tsp pepper, 1/4 cup oil.
Grill, bake or crock pot this chicken. If you grill, take marinade and simmer on stovetop till reduced by half.

Kalua Pork
2.5 lb pork roast, 1 Tbl Hawaiian salt, 1 Tbl liquid smoke, 3 Tsp garlic minced.
Cook in crock pot on low for 8-12 hours. Shred, eat with rice

Chicken Philly Cheesesteak
1 1/2 lb chicken breasts, 2 green bell peppers sliced, 1 onion sliced, 14 oz chicken broth, 1 pkg italian dressing mix, 2 garlic cloves.
Crock pot for 6-7 hours on low, or 3=4 hours on high. Shred and spoon onto hoagie buns with toasted provolone cheese.

Sweet and Sour meatballs
1 1/2lb cooked meatballs, 1/2 onion chopped, 1 bell pepper chopped, 1 can pineapple tidbits with juice, 3/4 cup sugar, 4 Tbl ketsup, 1/2 cup white vinegar, 1 Tbl soy sauce, 1 tsp garlic salt
serve over rice. Cook in crock pot on low for 4 hours

Teriyaki pork Chops
2-3 lb pork chops, 2 tsp garlic minced, 2 Tbl brown sugar, 1/4 cup soy sauce, 1/3 cup chicken broth, 1 tsp sesame oil, 1/4 tsp ginger,
cook crock pot on low 4-5 hours till tender

I am adding a new recipe to this blog that i will use this next week .

Country Pork Ribs-

2 lb boneless pork ribs, 1 1/2 cups ketsup. 1/2 cup brown sugar, 1/2 cup white vinegar, 2 tsp season salt, 1/2 tsp liquid smoke. Crock pot low 6-7 hours. Take out the ribs and keep warm, skim off fat. Place liquid in saucepan and reduce on summer for 15 minutes. Add back to the meat.

Brown Sugar Garlic Chicken $8.00

6 Chicken breasts, 1/2 cup soy sauce, 1/2 cup ketsup, 1/3 cup brown sugar, 2 tsp italian seasoning, 1/2 tsp pepper, 6 cloves garlic minced

Catalina Cranberry Chicken $8.00

6 Chicken breasts, 1 can whole berry cranberry sauce, 1/2 cup catalina dressing, 1 pkg onion soup mix

Sweet Fire Chicken $8.00

6 Chicken breasts, 1 red bell pepper- chopped, 1 can pineapple chunks with juice, 2 tsp minced garlic, 1/4 tsp red pepper flakes, 1/2 cup sugar, 2 Tbl sweet chili sauce, 1/2 tsp salt, 1 cup water

Brown Sugar Balsamic Pork $7.00

2 lb Pork Roast, 1 tsp sage, 1/2 tsp salt, 1/4 tsp pepper, 1/2 cup water, 1/2 tsp garlic powder. Separate glaze to put on in the last hour of cooking: 1/2 cup brown sugar, 1/2 cup water, 1 Tbl cornstarch, 1/4 cup balsamic vinegar, 2 Tbl soy sauce. Cook for 2 minutes before putting on roast.

Italian Peach Chicken- $8.40

5 chicken breasts, 1 cup peach preserves, 2 Tbl oil, 2 tsp Minced garlic, 1 onion diced, 3 tsp italian seasoning, 1/2 cup chicken broth, 1 tsp salt, 1/2 tsp pepper, 1 tsp ginger.

5 chicken breasts, 2 Tbl oil, 1/2 cup balsamic vinegar, 4 tsp minced garlic, 1/2 onion diced, 1/2 tsp salt, 1/2 tsp pepper, 1 tsp basil, 1 tsp garlic powder, 1Tbl parsley.

May Freezer Meals

We will have a freezer meal class on May 16th. 9-11am at the church

Smoothie packs- $3.75 each

2 cups fresh spinach, 1 cup frozen berries, 1 cup fresh fruit, 1/2 banana, 5 pineapple chunks, 1 cup greek yogurt, 2 Tbl ground flaxseed. When you make the smoothie in your blender, you will need to add your own 2 cups of liquid to the frozen smoothie pack. You can add coconut water, any fruit juice, soy milk, rice milk, almond milk, or just water.

Pulled Chicken- $8.10

5 chicken breasts, 1 cup ketsup, 1/3 cup BBQ sauce, 2 tsp prepared mustard, 1/6 cup water, 1/8 cup apple cider vinegar, 1/2 cup brown sugar, 1 Tbl onion powder, 1 1/2 tsp season salt. Crock pot low for 6-7 hours, high for 3-4 hours. Shred chicken

Greek Chicken- $8.10

5 chicken breasts, 1 chopped onion, 1/4 cup olive oil, 2 Tbl lemon juice, 1 Tbl italian seasoning, 1 tsp salt, 3 tsp minced garlic, 1 1/2 tsp lemon pepper. Crock pot on low for 4-6 hours, on high for 2-3 hours. Shred Chicken. Serve on pita or flour tortillas. Serve with lettuce, feta cheese, tomaotes, cucumber. Tzatziki sauce is good too.

Thai Peanut Chicken- $9.90

5 chicken breasts, 2 bell peppers sliced thin, 1/3 cup soy sauce, 1/3 cup chunky peanut butter, 1 tsp ground ginger, 1/2 can chicken broth, 3 Tbl sugar, 2 tsp minced garlic, 1/2 tsp red pepper flakes. Crock pot on low for 6-8 hours. on high for 3-4 hours

California Chicken- $10.20

5 chicken breasts, 1 cup orange juice, 1/3 cup sweet chili sauce, 2 Tbl soy sauce, 1 Tbl brown sugar, 1 tsp dry mustard, 1 tsp garlic salt, 1/2 bell pepper- chopped, 13oz mandarin oranges-drained, 1 can pineapple chunks- NOT drained, 1 tsp curry powder. Crock pot on low for 6-8 hours. On high for 3-4 hours. Shred chicken and serve over rice.

Cilantro lime chicken- $9.30

5 chicken breasts, 1/4 cup lime juice, 1 bunch cilantro- chopped, 1 can corn- NOT drained, 1 can black beans- drained, 1/2 tsp garlic powder, 1 tsp cumin, 1/2 tsp pepper, 1/2 tsp salt, 1/2 chopped onion. Crock pot low for 6-8 hours. on high for 3-4 hours. Shred Chicken, serve with chips, tortillas and mexican toppings.

Cinnamon Apple Pork Chops- $6.70

6 boneless pork chops, 1 cup apple sauce, 3 Tbl cinnamon. Crock pot on low for 4-6 hours.
